We are having a bbq for my daughter and about 50 of her school friends (16 yr olds). Eeker

The bbq'ing is being done on 3 bbq's, by my dad, hubby and brother.... one bbq will be designated as a meat free one (if necessary). Also... with these numbers we will be trying to keep it relatively simple... burgers, sausages, (with jacket potates, and a variety of salads for them to get inside)

There are at least 10 vegetarians amongst her friends.

Any suggestions as to what we can serve them in place of the meat stuff. I had thought perhaps falafal and pitta bread. Or have veggy burgers and sausages evolved to not fall apart and taste ok since I last hosted a barbie?

Any suggestions appreciated.

Mmmmm, its a good point, I think I should probably allow for the meat eaters to have the non meat stuff as well.... or there'll be sudden conversions to veggy on the day (I have been to weddings, where when realising the meal is salmon, people have suddenly said 'oh actually I am vegetarian now')

NO.. its not til the end of June.

The invites go out today, and I am trying to sort out what will be needed.

(there is small writing on the invitations, in case of bad weather please phone to make sure it isn't cancelled)

No, don't misunderstand that... the meal for all was salmon, and some people not liking fish wanted to then try and blag a mushroom risotto.

spicy bean burgers go down a treat

!

Ingredients

1 carrot, diced small
2 tbsp oil
1 onion, chopped small
1 clove garlic, chopped
1 tsp ground cumin
1 tsp ground coriander
1 tsp dried mixed herbs
Â― tsp paprika
Â― tsp chilli powder
4 oz cooked red kidney beans (half a 400g tin, rinsed and drained)
4 oz cooked chick peas (ditto)
1 tbsp cooked sweetcorn
1 level tbsp flour

Method

Boil the carrot until al dente then drain.

Meanwhile, heat 1 tbsp of the oil in a frying pan and fry the onion and garlic for 5 mins until soft and starting to brown.

Add the herbs, spices and flour, and cook for 1 min, stirring well (don't let the flour burn).

Mash the beans and chick peas with a fork. Mix in the onion mixture, the carrots and sweetcorn and mash some more. Season to taste.

Heat the remaining oil, shape the mixture into 4 burgers and fry for 5 to 6 mins on each side til done.

Halloumi Skewers

Use Pittas Halloumi cheese which is vegetarian.

Ingredients

250g/Â―lb Halloumi sliced into bite sized pieces
500g/1lb small, new potatoes, boiled until tender
salt and pepper
olive oil
barbecue skewers

Dressing

45ml/3tbsp olive oil
15ml/1bsp white wine vinegar
5ml/14tsp lemon zest
15ml/1tbsp green olives, finely chopped
5ml/1tsp ground coriander
15m1/1tbsp fresh coriander leaves, torn
1 clove garlic, crushed
5ml/1tsp wholegrain mustard
salt and pepper
50g/2oz fresh herb salad

Method

1. Thread pieces of Halloumi and potato alternatively onto skewers.

2. Lightly brush with oil and sprinkle with salt and pepper.

3. Barbecue over the grill until the kebabs are heated through.

4. Meanwhile combine all the dressing ingredients together in a screw top jar.

5. Serve the kebabs on a bed of fresh herb salad, and pour over the prepared dressing.

TartanVeggie.. A friend from way back was veggie... and I learned the rules back then! No meaty cross contamination! Big Grin

(was also trained to check ingredients on everything, and to cross check anything listed as a alpha numeric code to check it was not once part of an animal!)

However, at bbq's she would just rock up with a pizza hut veggy pizza for one Big Grin
