We're not eating till about 10 tonight - I just put a shepherds pie in the oven (one I prepared earlier) It looks scrummy - minced beef, onion, garlic, green beans, carrots, baby corn and mushrooms seasoned with a teaspoon of Chilli flakes and HP sauce - topped with mashed swede and carrot (for diet purposes) and a sprinkle of grated low fat cheese, We will have sprouting broccoli and cauliflower with it  YUM.

 

Took me almost as long to type it as prepare it

I have as suggested above used peppers and mushrooms in my salads and they are good ingredients.

 

For tonights salad I have used what I bought the day before but cut down on the cheese and added a boiled egg.

 

I am so enjoying salads that I may not have hot cooked food for the foreseeable future !!

 

Although tomorrow at work we are having a special Fish & Chips day.

ALL of the stuff mentioned above ..    I eat salads most of the time for my pack up lunch at work...  once the basics are added I then tend to throw whatever is in the fridge in it... 

 

as back up (to protect against a day of a boring salad...  should the fridge be bare)...  I have jars of cocktail gherkins, capers & olives to throw in!

The only form of olive I cannot stand is in it's natural state. I love the oil and can eat it in cooked food, but out of the jar - Nooo.

 

Gherkins is something I rarely have, my Dad loved them. Maybe it's time I tried them again.

And don't forget you can put fruit in an ordinary salad - apples, bananas, grapes....not necessarily at the same time.but you can if you want.

Cold meat, cold hard-boiled egg, potato salad, cole-slaw,red cabbage, cucumber, fresh garden peas....

 

The only limits to a salad are your personal tastes and imagination.

Oh - and the availability of ingredients.

I have tried grapes in the past and apple, but that is as far as I've been with fruit.. for now.

Excellent. I have just got in from work and about to have my third in three days. It's going to be pretty much the same as yesterday - finishing up ingredients. Tomorrow however is a shopping day, so a few different ingredients will be purchased.

Some Feta Cheese might be nice ........or goats cheese/

Hi Soozy, thanks for the idea, I'm just not a cheese fan, I like a little bit of mild Cheddar, Cheshire or Red Leicester but that is about it. I've tried Feta and Goats and not really to my liking.

 

I am thinking of toasting a few pine nuts and throwing them into the salad. Definitely buying Green, Red and Yellow peppers to have tomorrow.

 

Anyone tried courgette?

Yes - I'm not a big fan TBH - it's a bit nothingy.

I was commenting earlier how I was not a lover of cheese, my Dad however loved a bit of blue cheese. I've never tried any blue cheese as the smell has always put me off. The pickled walnut sounds interesting.
