I ordered a box of them (they aren't available easily over here, but El Loro gave me a link, thereby contributing to the cannibalism), and I think I ate them continuously until they were gone!

No, Beams. The pic I posted was freshly made. They're fried in oil a little longer than your recipe, and in this picture they have Cajun seasoning on them instead of sea salt. I was trying more to relay the size of each slice of potato than anything else, really.
That sounds more like potato wedges than chips!

The best chips are made by cutting waxy potatoes into thick chips, soaking them in water and then drying them off.  The are fried in a deep fat fryer at about 130 degrees celsius until soft, than drained.  Then they are fried again in hot oil (180 degrees celsius) until golden.
