I thought it might be a nice idea if we had a place to share recipes, whether they're your own or one you've followed. 

 

You might find that what I post are going to be (at the moment) low fat recipes, but that's because I'm dieting. But please just post any recipes you would recommend. No matter whether they're diet or not.

 

 

After our meal out on Friday, I loved the dip we had, so I adapted it yesterday to make a fat free version. So here goes.

 

2 Aubergines

1 clove of garlic

1 tsp cumin powder

1 tub of fat free fromage frais 

 

Cut the aubergines in half length way. Score the flesh, spray with a little fry light & season with black pepper. Roast in the oven at 170c for 30 mins.

 

Once it's cooked remove from oven & cool. When it's cool remove the skin and chop up the flesh. 

 

Mince the clove of garlic and add to the aubergine along with the cumin. Then add as much or as little of the fromage frais as you want to make the dip.

 

I had it spread on to little gem lettuce leaves, then topped the lettuce leaves with  chicken, peppers and onions. Like a fajita but without the bread.

I was proud as punch one day when the boy said he was cooking, had his iPod out with the recipe on. It was scrmabled eggs. 

 

I don't speak of scrambled eggs. Too many bad memories.

My friend and I started weight watchers a few years back and every time we discussed what we were making for dinner hers was chicken, peppers, onions and mushrooms on sticks

I burnt boiled eggs last xmas morning.  They exploded and everything.

I think your recipe should be on the first page when the book's published

Ha, ha, that's exactly what happened here tonight: followed by strips of steak, cumin, coriander, cayenne, garam masala and turmeric and then a tbsp of peanut butter and formage frais to make a kind of creamy beef satay curry. All Slimming World friendly of course

Cinds, if you look in here: Not being a VIP I can't search for the thread where you were asking re somewhere to go for Sunday lunch nr Thirsk. There's a newish place in Sowerby, (so just mins away, just off the A19,) that I'd heard great reviews about so went a couple of weeks ago and it was excellent, I'll definitely be back. I think it might be perfect if I remember rightly what you were looking for including being family friendly. It's called Fantinos and has a massive wood burning oven that they cook much of the food in. On Sundays they do a roast, several other dishes on the specials board and their 'normal' menu with a great selection of pastas and their fabulous home made pizzas.

Oh, and the owner, Sean, was previously with the Blue Lion at E Witton, an excellent restaurant where Jamie Oliver recently visited for a private dinner party: praise indeed!
