I have never seen any HP film or read any HP books.

The Books were brillo pads!
The Films were errauahhhuriegiierr. Although Deathly Hallows Part 1 was probably the best, in my honest, humble, if you don't agree then whatever, opinion.

I think I've only seen the first 4 films... I kept getting pissed off that they missed bits out - quite often large chunks that were important to the plot

Yep.. I think the films on their own were ok if you'd not read the books - but they're not a patch on the books. Usually the way of course.
Best film was probably the first one... they didn't miss much on it. The rest were abit disappointing.
