What this guy needs is staff that 'buy into' his vision for the hotel and want to go along, contributing to it's success. I like the idea of relinquishing a small percentage of the business to the employees, give them a small number of shares as well as a wage, they should then be more invested in seeing the business grow and succeed. They are likely to treat the business and each other a lot better, looking to be more efficient, more effective in their roles and always have an eye on the bottom line, the better the business does, the better they do.
The owner will be happier, hopefully have more turnover and less turnover of staff.
