Monica's challenge for two of the chefs is to fillet and cook a John Dory to be served with a vibrant green parsley sauce and a garlic cream.
Marcus's challenge for the other two is to prepare poached figs with honeycomb and flavoured cream.

It's not known why a John Dory fish is so named. It's possible that it was named after an old English ballad of that name. The composer Ralph Vaughan Williams collected English folk songs including that ballad:
