Monica's skills test is a dish of oeufs meurette (a bourguignon sauce topped with a poached oeuf).
Marcus's is to create drop scones with a suzette sauce. Named after a woman named Suzette who had drunk so much Grand Marnier that while she was trying to bake some scones, dropped them, bent down to pick them up, but when doing so went up in flames as she was too close to the oven. (or I may not be telling the truth )
