I think they wanted Radha to stay in the competition to the end as they were interested to see how she developed in skill over the weeks. She has now retrained and has become a private chef in the West Yorkshire area - "The Spicy Flexitarian".
Pookie is clearly unique. If she does decide to be a chef I think it more likely that she would be a private one rather than having a restaurant.
Eddie has already said that he wants to open his own restaurant:

I wasn't surprised Eddy won, he proved from the start that he had the talent, He just needed to refine his portion control
