I think it's because she enjoys the attention and also she enjoys telling him off and tut tutting at him. Maybe she's hoping his pathetic pursuit of her will strike up sympathy from the viewers.
Initially I thought that Noirin was being nice, trying not to hurt his feelings and that may have been the case at first, however they have had many disagreements.
