Looking back I see that I haven't answered a couple of questions.

Yes! I went to Lakeland. The jellybag which had been passed down through the family will be the last. I can fashion my own set up. I paid  a fiver for a cheap set of Salter scales, and rather over the top for a bottle of certo and a can of lemon pulp. I bought the latter two because I couldn't find them anywhere else. However it's jam sugar from now on.
