I loathe it....but Indian sweets using it are far too sweet and sickly

yes I know what you mean and they can be sickly sweet but every now and then i just love em 

At school they used to serve blancmange for dessert....it was dire and there was always a thick skin on top.....it was widely known as pink lint

Not sure about rice pudding in a tart case
