What does that mean?

You bake the pastry for ten minutes or so to harden the base before you add the filling - so you don't get a soggy bottom. The ceramic beans stop the pastry from bubbling up.

it's not confined to pitmen either... I was the youngest of five kids.. dad and three brothers all had manual jobs - and being the baby I always had to sit on the floor....    No showers in those days, so there was no bathing before tea ...
