I liked this when i tried it, although i did leave out the sausages.. It's not really a salad but its, one pot rice dish

 

ingredients

  • 1 onion, finely chopped
  • 450g chicken thigh fillets, cut into bite-size chunks
  • 6 Quorn sausages, sliced
  • 1 red, 1 green and 1 yellow pepper, deseeded and roughly chopped
  • 2 courgettes, roughly chopped
  • 2 tsp dried thyme
  • Zest and juice of 1 lemon
  • 400g can chopped tomatoes
  • 250g long grain rice
  • 450ml chicken stock
  • Salt and freshly ground black pepper
  • A handful of fresh parsley, chopped

method

  1. Heat a large pan sprayed with low calorie cooking spray. Add the onion and fry for 10 minutes to soften. Stir in the chicken and Quorn sausages and carry on cooking over a medium heat for 10 minutes.
  2. Add the peppers, courgettes, thyme, lemon zest, chopped tomatoes, rice and stock and bring to the boil. Reduce to a simmer, cover and cook for 20 minutes, stirring occasionally.
  3. Remove the pan from the heat, stir in the lemon juice and season to taste. Leave the jambalaya in the pan for a few minutes to soak up any remaining liquid. Serve sprinkled with some freshly chopped parsley.

As for the driving test, I guess a few nerves are bound to occur but I'm sure you will pass 

I had driving lessons but I decided I would never make a good driver, well driver tbh

Jen, I wouldn't have made a good driver tbh. A danger to myself and everyone else on road or pavement

Or i mixed my pasta sauce tonight with pasta and put that in my fridge for tomorrow lunch time... I do prefer that warmed up though.

 

 

Today I picked up some knock down red and green chillies along with some Sainsbury's best of prawns. Will be doing a chilli, prawn and mushroom combo tonight.

Just eating it and I used two chillies, one red one green. The prawns are there but not in your face. The heat is at a nice level.

 

 

Good experimental dish from what's in the fridge.

 

Just finished and it worked well. Not overly hot, prawns worked and the mushrooms (cut thickly) added a different element. Finally used a handful of penne pasta with the remainder of some tom sauce.

I lost 0.5lb this week Jen, (which was pretty good given I had a couple of evenings out and a wedding do where I didn't count the gin and processo syns!) Hope you do the same, good luck for tomorrow x

I've gone another half stone for the same reason Jen, want to be v comfortably in the 'healthy weight' range with room to spare ....although my boobs have all but disappeared

That's my worry! The last few lbs have defo come from there 

 

Think I'll see how i get on this week... I went and tried on some clothes tonight and i can fit into my target size so that made me happy

Thing is though, anything over the 'Healthy' range is going to show up as 'OVERWEIGHT' regardless as to whether it's one ounce, one stone or one ton!

Agree Soozy, once you're 'in the zone' it's really not difficult to get it off, however, keeping it off is another matter. I'm determined this time 'though, that I will keep going to SW every week. That makes me sound/feel like a right saddo, but I just know if I don't have the discipline of standing on those scales every week that it will start creeping on again. I do the 'weighing' now, took some effort to persuade me to be a 'helper' (can't say social team, that really, really makes me sound like a saddo LOL) but I actually really enjoy it and it's only an hour and a half a week out of my life
