I'm doing Slimming World and found a recipe on minimins.com for a curry sauce thats totally syn-free but is made from Cauliflower so I was sceptical to say the least when making BUT it is AMAZING!!!  It's so easy to make and  you can make up loads to freeze but at the rate my 10yr old is eating it with a spoon there'll be none left to freeze

 

Boil up some cauliflower (fresh or frozen) with water that just nearly covers the cauli but not quite.  Add some chicken stock (I used 2 cubes) let it all simmer for a bit then blitz it all up and add 2 teaspoons of curry powder and another wee whizz and it's done!

 

Tastes like curry from the chinese!

Ells...get yaself some plain noodles....add a stock cube or two....brilliant diet fodder

The curry sauce sounds ingenious - using cauli to thicken is a brilliant idea.

He seems fine today Sooz He can walk on it so I sent him outside for a while and spotted him running lol.

 

Yes Sooz it's a great idea, not mine though lol.  minimins is a great place for recipes.  The fact that this one is crammed with superfree is great and the once I added chicken, mushrooms, onions and chillies it was way more than the 1/3 suggested

It's brialliant Rexi.  I get more info about SW there than I do at the meetings!  Loads of recipes and lists of syn free foods that I would never have found out about.

Just got  around to making the curry and WOW!!! well impressed,cheers Ells.

My mates fat free curry:

 

2 potatoes, 6 lumps frozen spinach, 4 mushroom ,one onion, curry powder,one/two chicken breast, can of tomatoes.

 

Chop up all the stuff, cook in a pan with the curry powder, toss it about a bit,do not use oil,when chicken is browned add a pint of chicken stock, add some chopped chilli if you want a hotter curry.tip in the tomatoes.

 

Season it as you want.Cook it  slowly for about half an hour, add tomato pureÃĐ if you want to thicken it.

 

Serve with boiled rice.

 

I will try the cauliflower one, sounds grim, but if it tastes good, it's worth a bash.
