Butter two slices of bread.
Put the corned beef on one slice.
Apply mustard and mayo.
Put other slice on top, et voila.
Geordie panacalty as follows:
Thinly slice Corned beef, onions and potato, layer in a pyrex dish, corned beef 1st, then onions then potato. Repeat layers until full, finishing with pots. In between each layer season with salt and pepper. Dissolve a stock cube and add when finished layering (but not too much). Cover and cook at 170-180 for about 1 1/2 hours. Cheese doesn't figure in a Geordie version. Corned beef should be tinned, sliced deli stuff doesn't work.
Note Bertie's torso, but imagine it yellow and pinkish brown. .

My mum's version , which I love:
Chop carrots, swede, onions, potatoes, parsnips and leeks and place in a large pan (mum used to make hers in a pressure cooker.) Add a cup each of yellow split peas and red split lentils, 2 oxo cubes, and 2 tbsps each of ketchup and HP sauce, several splashes of worcestershire sauce, then add water to cover. Bring to the boil, cover and simmer until everything is cooked through, then add a tin of corned beef chopped into cubes. Serve with crusty bread or dumplings and if you're like my family, more HP sauce!
I make spicy corned beef patties for OH. It's just a made up recipe but sooooo simple, you can add whatever you like really, it's perfect for using up leftover mash.
1 can corned beef, approximately the same amount of mashed potato, 1 onion - finely chopped, 1 green or red pepper - finely chopped, 1 fresh chilli - finely chopped, a handful of grated cheese, liberal sprinkling of dried chilli flakes, parsley, salt and pepper. Mix everything together in a large bowl, take out handfuls of the mixture and form into balls then flatten into a patty. Coat in flour then dip into beaten egg then coat in breadcrumbs. Shallow fry in groundnut oil until golden brown on all sides. I serve them with rocket salad and brown bread and butter.
