I've got to say I'd have expected a Caribbean chicken to have had something like a jerk seasoning on it - just plonking it in rum doesn't really do much for it so I'd agree with the diners that is comes across as bland

I thought as it was Caribbean chicken it would have sort of fruit, like pineapple, paw paw etc.... and be quite colourful

I've got a lovely recipé for Caribbean Chicken. A friend gave it to me out of her Weightwatchers Cookbook.

It only has pineapple in it but my husband doesn't care for fruit in with his main course!
