It's Mauritian...but I adapted cosI put 2 types of fish together.Nod

Salmon steaks

Raw tiger prawns

Tinned toms

Tom puree

Fresh thyme

Garlic

Chilli flakes

Onion


Season salmon with salt and pepper.....fry them till crispy. Should only take about 10 mins in hot oil. Take out and put on a plate covered with kitchen tissue.

Leave a little bit of oil in same pan. Add chopped onions, garlic (up to you how much you like), a good handful of fresh thyme and chilli flakes (again up to you how hot you like it).

Saute together for a few mins. Add mushed tin tomatoes (mush them in your hands), a generous squirt of tomato puree and season. Cover and let it simmer for about 10-15 mins.

Add raw prawns and stir into tomato mixture, cover and leave for about 5 mins or so...or at least till prawns turn pink.

Then add cooked salmon....cover the tom sauce over it. Let it simmer for about 15 mins or so.

You can add chopped coriander on top....up to you if you like it.


Serve with plain boiled white rice.
