Good question.
That's just a pic I nicked off t'interweb of some Welsh Rarebit. Mine didn't stay around long enough to be photographed. However, mine does go brown on the top without frazzling the edges of the bread. I grate the cheese and sprinkle a fair bit of Worcester Sauce on then put it under the grill on a high heat but keeping the pan on the base of the oven, then when it's a completely melted, raise the grill pan up to the highest level and blitz for about 20 secs until golden. Simples.

Well it tastes pretty good, i made it with Green & Blacks cocoa and it's got a Tia Maria and dark chocolate ganache filling. But it's a bit lopsided.
