I reckon a cat may do the hand grabbing thing when they are on their back and you wave a hand over them,but all that hissing and biting, I suspect it's down to the owner being a dick,tormenting a cat to get a vid on youtube.

Not really.
We adopted a cat from an old people's home, and it was bloody vicious. He would act all cute and coy, snuggle into your lap, then bite you.
Some cat's just have that nature.
