One would think that experienced chefs could work out they would not have enough time or alternatively practice so they know their timings.
To me, it looks like the time given is purposely on the short side so they are having to rush everything - it adds to the drama

We had nothing during the day....started about 9pm ....stopped about 2am....very little rain ,main stern seemed to be north of us
