Salmon fishcakes one of my favourites: mix together mashed potato, salmon, lemon rind and juice, cayenne pepper and nutmeg ; form into cakes and coat in seasoned flour; pop in the fridge for at least an hour, then either fry in a little oil or bake in the oven. Serve with either creme fraiche,cream or mayo mixed with lemon juice. Delicious Thumbs Up

One of our southern friends foolishly chose the salmon and dill fishcake option at a hostelry, in a town near us Super. They were unable to move more than 100 yards from the "facilities" the following day.

since i only ever use tinned salmon for sarnies i actualy find the own brand skinless and boneless is prefrable to jw tinned red although as i say i'd normaly have both in the pantry.

Yes, oxidisation, as with mashed bananas or a cut apple etc.
As with any fruit and veg it's not going to last for ever, but will last a wee bit longer in the fridge.

Don't peel it until you're ready to eat.........if it's peeled - lemon juice stops it from going brown - although - even if it goes brown - still tastes good.
