For the last two weeks I have been making vegetable salads for work. The basis for the meal is always: Plum tomatoes, beetroot, spring onion, radish, cucumber and a red, orange, yellow or green pepper. To add some filling element to the salad I have added either three grated carrots and sweetcorn or sweetcorn and a handful of small new potatoes. The whole thing then receives a liberal drizzle of either French, Italian or a chili based dressing.

 

Now this I find very filling and quite tasty. So I don't get bored I would like to add in or substitute some ingredients. No bread or rice or pasta though.

 

Any thoughts?

Prawns have been suggested, but I tend to prefer them in hot food. Good idea though. 

Oh ok How about some salmon ....the fresh stuff from M & S is very nice ....with or without extras .....eg peppered , honeyed etc. 

I have actually bought some salmon to flake into a salad.

I'm trying to make regular small adjustments to my diet and levels of activity so that I make gradual improvements and not try and do everything in one bang and then fall back.

 

I really want to buy a couple of new suits and I am determined to get into a shape that allows me to have a tailored suit.

It's plateaued a bit now EC ....so progress is slow ....got another 8 lbs to lose ......but I have lost about a stone and a half , so not too bad ....

Maybe the plateau is a natural stage and then you can kick on. But well done on your achievement so far.
