Maybe lower the heat and give em longer to cook? Also whenever my pancakes are brown but undercooked they usually need more egg in.

On one occasion I actually melted the handle of the pan I was using.

On another I had a tea towel over my shoulder and didn't realise it was on fire, I could smell burning but had no clue were it was coming from .

Me and pancakes don't work well, best just to buy them...safer for sure.

I should add that the same goes for banana loaf. I am now banned from making them.

That's as may be, but thats more akin to what we know as a pancake in Scotland.

What are you cooking them on erin, a griddle or a frying pan?

The heat is often uneaven in a frying pan, whereas you tend to get a more even heat distribution with a griddle.

That's as may be, but thats more akin to what we know as a pancake in Scotland.
