Leg of lamb with garlic, rosemary, soy sauce, honey and coarse grain mustard. Cooked in the oven for hours and hours till it falls off the bone - served with plain veg ... probably new potatoes and green beans and/or purple sprouting.

Actually I do a similar hours in the oven type thing with pork so I'd probably do that.

My signature dish would be lamb ... with lashings of mint sauce.... and if the judges didn't like it, then tough!
Mine would be traditional roast pork with all the trimmings......plain and simple, like me

Scallops, atlantic prawns in a creamy white wine sauce with linguine.
Pannacotta with a rasberry jelly prosecco topping
And an absolute must a cheese board to finish!

Oh I know I couldn't.
The pressure of being watched - I would be all fingers and thumbs.
It also seems to me that some people forget it is all about the food and the whole experience and that a simple dish beautifully served and seasoned is oftenbetter than some complicated nouveau cuisine thing.
