I've tried that...not sure that the par boiling really adds anything??? Twice frying works for me.....in groundnut oil

Fry once at a lower temperature to 'cook'....remove, then get the temp really hot and bubbling to quickly brown and 'crisp'

It's not so much par-boiling as par-frying (if that makes sense?)

At least that's what they say on all the cookery programmes!  I usually just buy chips for frying - frozen - and then deep fry them.  They are better than oven chips, but not as good as chips from the chippie.

Frozen chips are a CRIME!

Once at lower temperature to cook through.  Out, drain.  Temperature up.  Ref fry to get a crispy coating.  Twice cooked chips rule.
