Oh Queen of the High Teas, when you said you were going to do some baking I had a flashback to staying with my aunt Mary when I was a girl and we used to make rock buns.

Not all of the mixture ended up going in the oven of course because every time her back was turned I had to try the mixture to see if it was still as delicious.

Mmmm, now I think I'm going to have to make some of them tonight. Extra sugar on top (of course) so you get that lovely crunchy texture.

As for a cake, I'm rather partial to one with a butter icing layer (either in the middle, or in the middle and on top). Yummy x

I think you'd eat chocolate if you tried them fresh out the oven Nod. You can even buy the ready to bake ones and just add a splash of nutella in the middle. They're well nice. Razzer <-licking lips

Cream butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy. Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture. Stir in oats and raisins. Drop by teaspoonfuls onto ungreased cookie sheets.
Bake 8 to 10 minutes in the oven, or until golden brown.

Nooo! It has to stay in there for another couple of months at least. It's not due till the end of August. Eeker I have plans. Disappointed And shopping to organise. Pronto. Present Glance

Lemon Sponge
225g softened unsalted butter
225g caster sugar
4 eggs
grated zest of 2 lemons
225g self-raising flour

Lemon Drizzle Icing -
juice 1 and a half lemons
85g caster sugar

Pre-heat oven to 180. Line a standard loaf tin. Beat the butter and sugar until pale and creamy, add the eggs. Sift in the flour, then the lemon zest. Spoon into tin and level off. Bake for 45-50 mins. Mix the lemon juice and sugar. Prick the warm cake all over, then pour over the drizzle - the juice will sink in but the sugar will form a crisp topping. Leave in the tin until completely cool.
