but i can;t find the answer to this anywhere - I have a piece of pork in the oven and it seems to have a thick creamy like substance on it - is this just the fat or does it mean it has gone off??

A bit like cheap bacon where the added salt and water to cure it comes out when it's heated up in a frying pan? It might be that. It's a sort of emulsified fat, I think.
I would guess its just the fat.

If it's at the start of the cooking then it's probably the water sweating out.

And feel it - if it was off it would have been quite slimy to touch.

And feel it - if it was off it would have been quite slimy to touch.
I didn't really feel it much before i put it in buti don't recall any slimliness as i lifted it from the packet into the baking tray!!
Indeed! I well remember leaving a doner kebab, thinking that will be OK later. I next viewed it when it had cooled down. What I saw put me off completely and I haven't bought one since.
