Also whenever my pancakes are brown but undercooked they usually need more egg in.
That's as may be, but thats more akin to what we know as a pancake in Scotland.
What are you cooking them on erin, a griddle or a frying pan?
The heat is often uneaven in a frying pan, whereas you tend to get a more even heat distribution with a griddle.
